Frozen bananas and mini chocolate chips are all it takes to make these tasty little ice cream bites that are the perfect healthy summer treat!

If you’re anything like me your favorite meal of the day is dessert, but two bites into your favorite flavor ice cr
eam and you’ve already gone over your calorie allotment. That won’t do at all! I’ve found the perfect answer to our little dessert dilemma and it comes complete with chocolate chips on top!
Step One
Slice and freeze about 6 ripe bananas for about an hour and a half
Step Two
Set the bananas out for about 5 minutes to let them soften a bit before pulsing/blending them in a food processor or blender until smooth and creamy, and then stir in the mini chocolate chips.
Step Three
Scoop the ice cream into a mini muffin pan lightly spritzed with coconut oil, and then sprinkle each one with a few more mini chocolate chips. Put the bites back in the freezer for about an hour.
Use a knife run under some hot water to help pop out the “ice cream” bites. These desserts will keep up to 2-3 months if you store them in a plastic freezer container. Enjoy!
